Weekend Menu #8 – Simple Easter Menu

 I love Spring. This time of the year brings so much hope and remembrance of just how truly life’s details are not completely mine to control – and that is a good thing. Here’s a lovely simple Easter menu roundup for you today.

Let’s talk about today. I am prepping for Easter dinner. I am excited to have all my chick- a -dees under one roof this year even if it is only for a day – I will take it!  I pulled together a simple Easter menu to keep the focus on family and allow us to spend every moment together enjoying each other’s company.

Appetizer

By popular request… Stuffed Eggs. I add sautéed onions, barbecue sauce, minced garlic to the egg mixture. I chop and sprinkle oven baked bacon and chives on top. Such a versatile little dish – make it your own – add your favorite ingredients!

 

Main Meal

The standard Roasted Veggies will make an appearance. Potatoes, carrots, asparagus and brussels sprouts.

 

My favorite “Go-To” summer meal of Grilled Lemon and Rosemary Chicken.

 

Dessert

Another family favorite and heavily requested Lemon Meringue Pie

 

Throw in a few rolls and that is it, folks.
